Pork Sausage

After being diagnosed with migraine headaches at a young age, I have had to avoid MSG for most of my life. One food I was particularly crushed about was sausage. It was one of my favorite pizza toppings, and for years I was unable to eat it. Until I decided to just start making my own! This delicious sausage is great on pizza, but also in spaghetti sauce or chili.


  • 1 lb ground pork
  • 1 Tbsp fennel seed
  • 1 tsp salt
  • 1/2 - 1 tsp crushed red pepper flakes
  • 1 tsp garlic powder

Mix all the ingredients together well and form patties, about 4 inch diameter and 1 inch thick. Fry in a skillet at medium-high heat until both sides are browned, about 2-3 minutes per side. Then, break up each patty a little and fry for an additional 1 minute on each side. Let cool on paper towel to absorb some of the grease. Finish breaking up the patties into your desired size pieces and use immediately or freeze for future use. Enjoy!
